Zucchini Bread

Ingredients

3 each egg
2 cups sugar
1 cup salad oil
2 cups zucchini grated
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 cup pineapple crushed
3 teaspoons vanilla


 

Instructions
Beat eggs, add sugar and canola oil and then the shredded zucchini. Then sift together the flour, baking powder, soda, salt and cinnamon. Mix with the liquid mixture; the batter needs to be somewhat stiff; it it isn't, add more flour. At this point, add the pineapple, nuts and vanilla. Pour into two greased and floured loaf pans or 4 mini-loaf pans until 3/4 full.

Bake at 350* until done, which takes 30 minutes for mini-loaf pans, 45 minutes to an hour for regular pans.
