Wheat Germ Raisin Muffins

Ingredients

1 cup raisins
1 3/4 cups whole wheat flour
3/4 cup wheat germ
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons vegetable oil
1 1/2 cups milk
1 egg beaten


 

Instructions
Chopped figs or dates instead of raisins are also good in these muffins. Pour boiling water over raisins and let stand for 10 minutes; drain. In bowl, combine flour, wheat germ, sugar, baking powder and salt; stir in raisins.

Combine oil, milk and egg; pour into flour mixture and stir just until combined. Spoon into nonstick or paper lined muffin tins, filling each three-quarters full. Bake in 375 F oven for 18 to 20 minutes or until firm to the touch.
