Warm Spinach Salad

Ingredients

10 ounces spinach leaves
1/4 pound Bacon chopped
1 cup Red Onion finely chopped
1 package corn
1/2 cup red wine vinegar
4 teaspoons sugar
1/4 cup blue cheese crumbled
2 cups croutons, seasoned


 

Instructions
Cut spinach leaves into 1/2" wide strips. Mound spinach equally onto 4 plates. Stir bacon in frying pan until browned and crisp. Spoon equal portions over spinach. To the pan, add onion, corn, vinegar and sugar. Stir until onion is limp, about 4 minutes. Transfer onion and corn otto spinach, then spoon cooking liquod over salads. Arrange blue cheese equally on the salads, add croutons.
