Taos Inn Heavenly Cheese Pie

Ingredients

1 1/2 cups Graham cracker crumbs
1/4 cup Brown sugar, firmly packed
1/8 teaspoon Nutmeg
1/3 cup Butter, melted
6 ounces Chocolate chips
8 ounces Cream cheese, softened
1/2 cup Brown sugar, firmly packed
2 ea Eggs
1 cup Cream, whipped
1 teaspoon Vanilla


 

Instructions
Blend the graham cracker crumbs, brown sugar, nutmeg and 1/3 cup
melted butter. Reserve 1/4 cup for topping, press rest into pie pan
and chill.

Melt chocolate chips, and blend in softened cream cheese, 1/2 cup
brown sugar, 1/8 teaspoon salt. Add 2 egg yolks one at a time. In
another bowl, beat 2 egg whites and 1/4 cup brown sugar. Fold the
chocolate mixture and the whipped cream into the meringue, and whip
until thick
and shiny. Fold in vanilla, and fold into filling.

Pour into chilled pie shell. Sprinkle top with reserved crumbs.
Chill several hours.
