Stuffed Sole

Ingredients

1 pound sole fillets
pinch seasoned salt
pinch tarragon
1/2 pound spinach leaves
1/2 cup sherry
4 ounces Monterey jack cheese


 

Instructions
Preheat oven to 350*. Place fillets dark side up. Season with seasoned salt. Place spinach on fillets, top with shredded cheese. Roll fillets and place upright in baking dish. Add white wine/water mixture, top with tarragon. Bake uncovered for 15-18 minutes. If you wish, add Hollandaise sauce over the top of fillets and broil until golden brown.
