Strawberry Spinach Salad

Ingredients

1 each lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seeds
1/4 cup sliced almonds, toasted
8 ounces strawberries (1 1/2 cup)
1/2 each medium cucumber, sliced and cut in half
1/4 each red onion, small sliced in to thin wedges
1 package baby spinach (6oz)


 

Instructions
For the dressing, zest lemon, use the juice of the lemon at least 2 tablespoons combine with vinegar, sugar oil and poppy seeds. Whisk and refrig until ready to use

Toast the almonds in 350 degree oven for 10 minutes

Combine the strawberries, cucumber, red onion and spinach. Just before serving toss with the dressing
