Smoked Turkey Baked Chimichangas - Rachel Ray

Ingredients

1 Pound Smoked Turkey Breast Thickly Sliced
1 Tablespoon Chili Powder
2 Cups Slaw Cabbage shredded
1/2 Each Chipotles in Adobo Sauce.
1 Cup Tomato Sauce
3 Each Green Onion chopped
1 Teaspoon Salt
1 Teaspoon Pepper
4 Each Flour Tortillas
1 1/2 Cups Shredded Sharp Ceddar, Smoked White Cheddar or Pep
2 Tablespoons Olive Oil
1 Cup Sour Cream
2 Tablespoons Cilantro chopped
1 Orange
1 Yellow Tomato


 

Instructions
preheat your oven to 400 degrees.

Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, and green onions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen owl and set in microwave to soften if needed. To build, place generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the pan with olive oil, brush the wraps with olive oil and bake until golden brown all over 15 to 17 minutes. Top with sour cream, cilantro/parsley and chopped orange or yellow tomato for garnish
