Pumpkin Streusel Pie

Ingredients

1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 tablespoon flour
1 1/2 teaspoons cinnamon ground
1/2 teaspoon nutmeg ground
1/2 teaspoon salt
1/4 teaspoon ginger ground
1 can pumpkin
1 can evaporated milk
2 large eggs
Walnut Streusel
1/2 cup rolled oats
1/2 cup walnuts chopped
1/4 cup flour
1/4 cup butter
1/2 teaspoon cinnamon ground


 

Instructions
In a bowl, mix sugars, flour, cinnamon, nutmeg, salt and ginger. Add pumpkin, milk and eggs, whisk until well blended.

Pour this mixture into unbaked 10 inch pie pastry in a pan. Cover with walnut streusel (which is made by combining all of the streusel ingredients in a bowl. Duh.)

Bake on the bottom rack of a 375 degree oven until the center barely jiggles when pan is gently shaken, about 35 to 40 minutes.
