Molly Goldberg's Salmon Cakes

Ingredients

1 cup Salmon
1/8 teaspoon Pepper
2 tablespoons Grated onion
1 Egg
1 teaspoon Lemon juice
1/2 cup Bread crumbs
2 tablespoons Shortening


 

Instructions
Drain and mash salmon. Add pepper, onions, eggs, lemon juice and
1-1/2 T bread crumbs. Heat shortening in skillet. Shape into
patties and dip lightly in remaining bread crumbs. Fry patties over
medium heat until browned on both sides.
