Michael's Baked Carrots

Ingredients

12 each carrot
1 each onion finely chopped
24 each crackers finely crushed
2 slices velveeta sliced


 

Instructions
Slice the carrots and cooke them in enough water to cover. Cook until tender, drain water and save for later Add grated onion to carrots and mash with a potato masher and add about one package of crushed soda crackers for each 2 pounds of carrots. Use the extra carrot boiling water to make a fairly wet mixture.

Place in a casserole dish with a lid. Bake at 350 degrees for 30-40 minutes. About ten minutes before the carrots are done, place thin slices of Velveeta cheese on top; not too muich.
