1 1/4 cup flour
3 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
2 1/2 cup bran flakes
1 1/4 cup milk
1 egg
1/3 cup salad oil
Instructions
Stir flour, baking powder, salt and sugar together; set aside. Measure bran flakes and milk in bowl. Stir and let stand 1 to 2 minutes or until soft. Add egg and shortening, beat well. Add dry ingredients to cereal mix and stir only until combined. Portion batter evenly into 12 greased 2 1/2-inch muffin cups. Bake in 400 degrees oven 25 minutes or until golden brown. Yields 1 dozen muffins.
