1 1/2 pounds Sweet potatoes
1 tablespoon Butter
2 ea Garlic cloves
1/4 teaspoon Salt
1/8 teaspoon Pepper
Instructions
In a large sauce pan combine potato slices and enough cold water to cover. Bring to a boil. Cover loosely; boil gently over medium heat for 5 to 6 minutes or until tender. Meanwhile, line a large cookei sheet with foil and spray with Pam. Nuke butter for 15 seconds and stir in minced garlic. Drain potatoes, rinse with cold water. Arrange slices in single layer on sprayed cooket sheet. Brush butter mixture over potatoes, sprinkle with salt and pepper, broil 4 to 6 inches from heat for 6-9 minutes or until lightly browned.
