Fresh Pineapple Salsa

Ingredients

1 ea Fresh pineapple
1/2 cup Diced red bell pepper
1/2 cup Diced green bell pepper
1/4 cup Chopped red onion
2 tablespoons Chopped cilantro
1 tablespoon Chopped fresh parsley
2 teaspoons Minced Serrano chili
1 teaspoon Chives
1/2 teaspoon Salt
1/2 teaspoon Pepper
2 tablespoons Vegetable oil
1 tablespoon Lime juice


 

Instructions
Core, peel and quarter the pineapple. Put it on a baking sheet and
broil until the fruit just begins to brown, about 5 minutes per side,
then chop into 1/4" cubes and put in a large bowl. Mix in all the
remaining ingredients and refrigerate for at least 2 hours.

NOTE: This goes well on tuna and other fish steaks.
