Eggnog Brownies (Carol Parker) & Eggnog Frosting

Ingredients

1/2 cup butter or margarine
1 bag white baking chips (10oz)
1 1/4 cups flour
3/4 cup sugar
1 teaspoon vanilla (or 1/2 t vanilla & 1/2 t rum flavoring)
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3 each eggs

1 1/2 cups powdered sugar
3 tablespoons butter or margarine
1/2 teaspoon vanilla
3 tablespoons eggnog (1-3 T)


 

Instructions
Heat oven 350 degrees. Grease and lightly flour 13x9x2 in. pan.

Heat butter and baking chips in a heavy 2 qt saucepan over low heat, stirring frequently, just until melted (mixture may appear curdled)

Stir in flour, sugar, vanilla, salt, 1/4 t nutmeg and eggs. Spread in pan.

Bake 30-35 min. or until toothpick comes out clean. Cool completely. Spread with eggnog frosting; sprinkle lightly with nutmeg. Cut into 8 rows by 4 rows.

Frosting

Mix all ingredients until smooth and spreadable. (if you want a rum flavor, use 1/2 t rum flavoring and 1/2 teaspoon vanilla. Beat in 1/2 c of powdered sugar. Gradually add more sugar (about 2 cups) and 2-3 T evaporated mil, cream or milk beating until frosting is spreadable)
