4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup shortening
2 cups brown sugar
3 each eggs
2 1/2 cups dates chopped
1 cup water
1 cup sugar
1 cup nuts chopped
Instructions
Cream shortening and brown sugar until fluffy. Add one egg at a time and mix well. Add flour, soda, salt mixture, and mix by hand until flour is blended. Cover and chill dough for at least an hour. While dough is chilling, combine dates, water, sugar and cook over low heat for at least ten minutes, or until the dates become mixed with wather. Should be thick; then add nuts and cool completely.
When dates are cooled and dough chilled, divide dough in half and roll out into a rectangle 1/4" thick. Spread with date mixture to about 1-1/2" from each edge. Gently roll up and wrap in waxed paper and refriegerate. Do the second rectangle. After chilling "for awhile" take out one rull and slice about 1/4" thick. Place on cookie sheet either sprayed or with parchment paper. Bake at 400* for 10 minutes.
