1/4 cup Margarine
1/4 cup Flour, all purpose
2 cups Chicken broth
1 cup Yogurt, unflavored
1 ea Chiles, diced 7 oz. can
12 ea Tortillas, corn
2 cups Chicken, cooked
1 ea Onion, small
2 cups Cheese, jack shredded
1/4 cup Onions, green sliced
Instructions
Cut chicken into bite sizes. Melt butter in 2 quart pan; add flour. Stir until bubbly. Whisk in broth; stir until boiling. Remove from heat; mix in yogurt & chiles. Cover bottom of 9x13" baking dish with 1/3 of sauce.
Quickly dip tortillas in water. Drain and cut into 1" strips. Scatter 1/2 of chips over sauce, then cover with all of the chicken and chopped onion, 2/3 of the cheese and 1/3 of the sauce. Top with remaining tortillas, sauce and cheese. Cover dish and bake in 400 degree oven until hot in center, 35 minutes. Sprinkle w/ green onions.
