Chicken Quiche

Ingredients

1 pie crust unbaked
4 ounces Swiss cheese diced
1 cup cooked chicken chopped
1 1/2 cups half and half
4 egg slightly beaten
2 tablespoons green onion chopped
1/2 cup ham chopped
1/2 teaspoon salt
1 dash Tabasco sauce
1/2 cup artichoke hearts chopped cooked
2 tablespoons Dijon mustard
2 tablespoons flour


 

Instructions
Line 9" pie pan with unbaked pie crust. Cover with foil, shiny side down, pressing to mold; bake on cookie sheet at 425F for 15 minutes. Remove foil; brush lightly with mayonnaise (or mustard); bake 2 minutes longer. Reduce oven to 375F. Combine cheese, chicken, and flour. Add half and half, eggs, onion, ham, salt, Tabasco and artichokes. Pour into pastry shell. Bake 45 minutes; center will be slightly soft.
