6 corn tortillas
8 ounces Monterey Jack cheese shredded
1 can refried beans
1/2 pound chorizo or hot Italian sausage
2 tablespoons diced Ortega chilis
2 medium eggs
2 cups half and half
1/2 teaspoon salt
Instructions
Cook and drain sausage. Line a 9-inch pie pan with tortillas, extending about 1/2" over pan edge. sprinkle half the cheese over tortillas. Layer beans, sausage, and chilies. Beat eggs; stir in half and half and salt. Pour over quiche; top with remaining cheese. Bake at 325F for 30-40 minutes, or until set.
